Sambal chicken.

I AM NOT A CHICKEN!! Ayam Sambal.

 

Ingredients

A very tender chicken dish for 4

  • 1 tb sp sambal oelek
  • 2 tb sp oyster sauce
  • 1 tb sp sesame seed oil
  • 4 tb sp olive oil
  • 2 whole boneless/skinless chicken breasts
  • 2 tb sp sunflower margarine
  • 4 peaches, sliced
  • 1-1/2 cup whipping cream
  • 1/2 t sp turmeric

Preperation and execution

Cut the whole breasts in half and get rid of all the skin and fat. Mix the sambal, oyster sauce, sesame and 2 tb sp of olive oil together and pour over the breast. Put in fridge for 3 hours and 1 minute. Remove from fridge and take chicken out of marinade (save marinade for later use). Mix 2 tb spoon of olive oil and margarine together and saute the chicken for 2 minutes on each side. Add the "saved" marinade, peaches and cream. Simmer the chicken for about 7 minutes on medium heat untill chicken is cooked. Remove chicken and peaches and keep warm in oven. Add turmeric to sauce in pan and stir. Salt and pepper can be added as needed. Remove chicken and peaches from oven and add to pan. Simmer for another 3 minutes or so.

Remove from pan and serve with rice.
